Utilizing Sicilian pizza pans or deep dish pizza pans would produce an thick flavorful crust, that could then be topped with pesto, roma tomatoes, fresh mozzarella, and fresh basil. Sprinkle on some pine-nuts and you have a fresh, easy, memorable pizza. Experimenting with what works best for your concept, and what is available and market fresh is key to finding the signature pizza for your establishment.
